Zizanie

Zizanie comes from the latin “zizania”, originally rye grass but more commonly dissent. We chose this name as this wine is vinified in a suprising way.

Environment

These grapes were grafted on our Merlot grapes in 2008. They grow on limy clay soil a bit more fertile than for the reds and close to the Mas Zénitude.

Climate

The microclimate gave quite a bit of rain during end of winter and beginning of spring and thereafter, hot days and cool nights often with a refreshing wind from the mountains in the north.

Harvest and vinification

It is handpicked in small boxes of 10 kilos in mid September. As with all our wines we are respecting the nature by not using any chemicals at all in the vineyard, adding biodynamic preparations only and respecting the moon-calendar. Once in the cellar, the grapes are de-stemmed and by gravitation put in stainless steel for a maceration with the skins for eight days using their natural yeasts and adding no sulfites. Thereafter they are softly pressed in a vertical press and stored in three years old French oak barrels of 225 liters, and battered to utilize the natural flavors of the lees. The wine was bottled in May on a fruit day and not even in the bottles has been added sulfur.
