8 months in conical concrete vats.

Climate

The microclimate gave quite a bit of rain during end of winter and beginning of spring and thereafter, hot days and cool nights often with a refreshing wind from the mountains in the north.

Harvest and vinification

Mid-September it is handpicked in small boxes of 10 kilos. As with all our wines, we are respecting the nature by not using any chemicals at all in the vineyard, adding biodynamic preparations only and respecting the moon-calendar. Once in the cellar the grapes are de-stemmed and by gravitation put in separate conical concrete vats for a maceration with the skins for 15 and 20 days respectively using their natural yeasts, adding no sulfite and only pumping over the wine a few times using a very slow and soft pump. Thereafter, they are gently pressed in a vertical press and then mixed and pumped back to the conical concrete vats. The wine is bottled in May on a fruit day and not even in the bottles have sulfites been added.
