This Cinsault comes from old vines grown in between St Jean de Fos and Puechabon on limy clay soil having lots of big pebbles.

8 months in five years old French oak barrels.

Climate

The microclimate gave less rain than for our other wines and having even hotter days but still cool nights often with a refreshing wind from the mountains in the North.

Harvest and vinification

It was handpicked in small boxes of 10 kilos in mid September at prime ripeness. Since this field is new it had not been farmed with bio-dynamics, however last year no pesticides were used. Once in the cellar the grapes are put in a conical concrete vat with their stems for carbon oxide maceration for ten days using their natural yeasts and adding no sulfites. Thereafter they are softly pressed in a vertical press and stored in five years old French oak barrels of 400 liters. The wine was bottled in May on a fruit day and not even in the bottles has been added any sulfite.
